Cacao & Banana Pancakes (GF)




Surprise surprise, another recipe utilising cacao!


This recipe is currently my number 1 go-to for 'sweetness', especially in the lead up to my period. The ingredients are incredibly balanced and supportive (no nasties) for maintaining tip-top health (if you're anything like me, this is really important).


This batter will keep in the fridge for 24-48 hours, so you don't have to use it all at once.


If you're unfamiliar with Almond Flour (Almond Meal), no problem. Fortunately for us health nuts it's becoming more and more popular as a gluten free alternative in the health space, and can be sourced from your local Wholefoods or Coles/Woolworths in the health food isle.


As always, I deeply encourage the use of a high quality organic brands. I source mine from the local whole-foods shop (you could try Scoop Wholefoods, The Source Bulk Foods, or Naked Foods if you're local to Australia). When it comes to baking, the more fun you have, the better! You have total permission to experiment and play here!


The following recipe will make approximately 4 medium sized pancakes. Before you 'double' the batch to make more - I recommend making two separate batches. I've found 'doubling' the ingredients doesn't always work out so well. But hey, knock yourself out!


Oh, and because I rarely measure things properly, you may find that your batter turns out differently each time (yolo!).


Ingredients (I don't measure):

2 Eggs

1 Tsp Organic Vanilla Bean Extract

2-3 Tbsp Organic Pure Maple Syrup (or honey)

2 Tsp Peanut Butter

2 Medium Ripe, Mashed Bananas

1-1.5 Cups of Almond Flour

2-3 Heaped Tsp Organic Cacao

2 Tsp Cinnamon

1 Tsp Baking Powder

1/2 Tsp Pink Himalayan Salt

Almond Milk (use as much or as little to create the consistency you desire)

Coconut Oil for Cooking


Toppings (Optional): Organic Coconut Yoghurt

Strawberries


Method:

Combine all ingredients in a bowl and whisk together.


Heat a frypan and add 1-2 tsp of coconut oil and let it melt.


Pour desired amount of pancake batter into the frypan and cook for 2-4 minutes before flipping!
